Two major red-flowered trees on the South Island are pōhutukawa (New Zealand Christmas tree) and the southern rātā.  See also: treesthatcount.co.nz.
Lancewood / horoeka (Pseudopanax crassifolius) is a very distinctive native tree.  One theory is that the plants evolved with the tough leaves lower down and tender leaves higher up to resist being eaten by moas.

Birds like the berries of the cabbage tree / tī kōuka (Cordyline australis).
